Tim Havenstrite will open Cabo Blue, a sports bar-type restaurant, in the location formerly occupied by Victories. After 11 years in the food service industry, Havenstrite is now realizing his dream.
FAYETTE, Iowa (February 12, 2014) – Upper Iowa University has announced that a new restaurant will be opening in the University's three-year-old building on Main Street in downtown Fayette.
Tim Havenstrite, a West Union native, recently moved back to the area and will open Cabo Blue in the UIU-owned location. Havenstrite expects to open in March and is excited to jump into this new venture. "One of my goals has always been to open a sports bar – a place with a fun atmosphere that serves really great food that you wouldn't be able to find anywhere else," he said. "One night, I was sitting with my friends, which is this great group of UIU parents that have a passion for Peacock wrestling. We were talking and they said, 'You should look into opening a restaurant where Victories was.'
"So, I started to investigate the possibility; and here it is two months later, and we're gearing up to open. It's just been a wonderful, exciting experience to work with Upper Iowa to realize this dream of mine."
Havenstrite's vision for Cabo Blue is a fun place with great food and great service. "Everyone always asks about the name," he said. "The 'Blue' ties to our next-door neighbor, Pavo Blue, and Cabo San Lucas is my favorite vacation spot. It's fun and laid back, which is the atmosphere that I want for Cabo Blue. I want customers to have a unique experience, and I want our employees to enjoy working here."
Havenstrite will complete the sports bar vibe with two big-screen televisions in the upstairs portion of the building, and hopes to add Upper Iowa sports memorabilia to the décor. "The history of Upper Iowa is important to our community," he said. "I plan to reach out to several alumni who became successful coaches and athletes. I would love to showcase some of these unsung heroes here at Cabo Blue. With each piece there is a story, and it would be an honor to be able to tell their stories."

Cabo Blue will draw in visitors from all over northeast Iowa and beyond, which is a positive for our Main Street businesses and community."
The building had been occupied by "Victories," a restaurant/sports lounge that closed in 2013.
Havenstrite said the Cabo Blue menu will feature typical sports bar fare, but with some unique features and additions including specially seasoned hand-breaded appetizers and pork tenderloins, hand pattied hamburgers, non-traditional unique pizzas, along with chicken wings and boneless wings, steaks, ribs and Iowa pork chops.
In addition to popular beers, he is seeking local breweries to feature local beers on tap, as well as a special Hollan Wine from a vineyard in Argentina that is owned by a man from Waterloo, Iowa.
A grand opening celebration is being planned.
